L'Ainuzzu is an artistic Sicilian spun paste cheese with very ancient origins. I Ainuzzi are included in the national list of Traditional Agri-food Products (P.A.T). In fact it was a typical cheese that poked out in religious festivals like Corpus Domini. On that occasion, during the procession, it was tradition to expose it as a decoration. At the end of the celebrations, the cheese was distributed to the poor and the faithful to be consumed.

It is expertly shaped by hand while it is still warm and given the characteristic shape of small animals. It has a compact texture, a white-colored crust tending to straw-colored and a sweet taste if it is fresh, more pronounced if seasoned.

Produced with raw milk produced by owned farms located in the territory of Cammarata (Ag) in the Sicani Mountains, of brown Italian cows.

Shipments will be made from the premises of Tratti di Sicilia at the beginning of each week to avoid stocks in the courier's warehouses, the production lot and vacuum perfection will be checked to ensure maximum freshness.

COMBINATIONS: Table cheese.
